I enjoy cooking. I have a big file of all my tried and trusted recipes that I have collected over the years. Baking is another story. It is too precise! But I have a handful of flop-proof recipes that I turn to when the need arises, and they never let me down.
Sometimes I like to serve warm Cheddar, Feta and Spring Onion Muffins at breakfast. This recipe is truly a flop-proof recipe. They look shop-bought - which always puts a smile on my face because in actual fact they are dead simple and ever so quick to make. And the added bonus is that precision in this recipe is not something one needs to worry about – in fact you can change the ingredients to whatever you like and they still impress! Sometimes I add sundried tomatoes and feta, other times I omit the spring onion and add smoked salmon. Spinach with the feta is also a tasty alternative.
Here is how it is done...
Mix together all the dry ingredients, add the cheese and spring onions. Then beat the milk, oil and eggs and stir into the dry ingredients. And that is it! Spoon into a muffin tin and bake until golden brown on top.
