My Weekend Visitor

Dani, my nephew, is coming for the weekend. So let me explain. Dani is 18. He is always hungry. To add to that he has just moved from the home comforts in Windhoek to his own digs in Stellenbosch. You know where I am going with this, don’t you?

He hasn’t yet worked out how to juggle lectures (which seem to last all day), sport, sleeping, shopping and cooking.  So I guess he isn’t cooking much yet.  Even more reason why I need to be prepared – “food-wise”- for when he is with me this weekend.


So I am going to call on another of my flop-proof, quick-and-easy, kind-of-healthy recipes!


My Mom used to make these for us when we were kids.  Sometimes she would drizzle them with tangy lemon frosting, other times they would be drizzled with chocolate.  For this particular occassion there will be no drizzle – instead I have doubled the recipe because I know that by the time Dani leaves on Sunday he will have eaten half of the Crunchies already! 


This is how we make them (remember not to let on to anyone how simple it is!)


Mix all the dry ingredients together.  Add the melted butter, syrup and bicarb to the dry ingredients.  Mix well then press the mixture into a baking tin and bake till golden brown.  Leave to cool a bit before cutting them into squares.


An added “something” is that I have packed the Crunchies into an old ice-cream container.  You know – Student Tupperware!
